Mock Tenderloin Heat over to 425°. Rub 3-lb. eye of round roast with commercial meat tenderizer as directed by manufacturer. Place meat on rack in broiler pan. Insert meat thermometer so tip is in the thickest part of meat. Cook at 425°. For rare: 45 to 55 minutes (140°). For medium: 60 to 65 minutes (160°). Ten minutes before serving remove the roast from the over and let stand for easier carving. To serve, cut roast into thin slices. Makes: 12 servings
