Corn Muffins 1 Cup Yellow Cornmeal 1 Cup Flour* 2 tbsp. Sugar 4 tsp. Baking Powder ½ tsp. Salt 1 Cup Milk ¼ Cup Shortening 1 Egg Heat oven to 425°. Grease bottoms of 12 medium muffin cups. Blend all ingredients for about 20 seconds. Beat 1 minute. Fill muffin cups 2/3 full. Bake 15 minutes; immediately remove from pan. Makes: 12 Muffins *If using self-rising flour, decrease baking powder to 2 tsp. and omit salt.
