Maple and Pear Roasted Pork Tenderloin Recipe
Ingredients

1 pound trimmed pork tenderloin
Salt and ground black pepper
15-ounce can pear pieces or slices, drained well
1 tablespoon Dijon mustard
1 tablespoon maple syrup

Cooking Instructions

Preheat hot oven to 375ºF. Coat a shallow roasting pan with cooking spray. Season pork all over with salt and black pepper to your liking. Transfer pork to your prepared pan. In a blender or food processor, combine half of pears, Dijon and maple syrup. Puree until smooth. Pour mixture all over pork in pan. Put remaining 1/2 of the unprocessed pears around and on the roast. Place in hot oven and roast 25 to 35 minutes, until a meat thermometer reads 140ºF. Let pork rest on counter for about 10 minutes before slicing crosswise into 1/4 - 1/2 inch slices.
