Lemon-Dill Linguine Recipe
Ingredients

3 cups cooked linguine (about 1 1/2 cups uncooked)
2 teaspoons reduced calorie margarine
1 tablespoon minced chives
1/2 cup skim milk
2 teaspoons cornstarch
1 teaspoon dried dill
2 teaspoon grated lemon peel
3 tablespoons lemon juice
3 tablespoons grated Parmesan cheese

Cooking Instructions

Melt margarine in a small saucepan over low heat. Add chives and cook until soft. Combine milk and cornstarch and mix well. Add milk to saucepan and cook over low heat, stirring constantly until thickened. Add dill, lemon peel, lemon juice and salt and pepper to taste. Pour over cooked linguine, toss to coat and sprinkle with cheese.

Makes 4 Servings
Serving Size: 6 ounces
