6 Cups fresh strawberries; remove stems and non ripe parts
1 Cup water
3/4 Cup sugar
3 Tbsp. cornstarch
Red food coloring
1 baked pie shell
Cooking Instructions
Crush 1 cup of berries and cook with the water for 2 minutes; drain juice and set aside.
Blend sugar, cornstarch, and berry juice; cook and stir over medium heat until glaze is thick and clear. Stir in about 5 drops of red food coloring.
Spread small amount of glaze on bottom and sides of pie shell. Arrange1/2 remaining berries in shell; spoon 1/2 of remaining glaze over top of berries, coating each berry. Arrange remaining berries over first layer. Spoon remaining glaze, coating each berry.
Chill 3 - 4 hours. Top with whipped cream and serve.
