3 Tbsp. melted butter or shortening
1/2 cup sifted all-purpose white flour
1/2 cup stone ground whole wheat flour
2 tsp. baking powder
1 large egg, well beaten
1/4 cup fresh orange juice
1 tsp. grated orange zest
1/2 cup filtered honey
1/2 tsp. salt
Sift together white flour, salt and baking powder. Thoroughly mix in stone ground whole wheat flour.
In separate bowl combine egg, orange juice, orange zest, honey and shortening. Add wet ingredients to dry mixing only enough to moisten.
Spoon into well greased muffin tin or, use paper cup liners and bake in a preheated 400 degrees for 15-20 minutes or until browned.
