1/3 Cup water; warm
1/2 Cup sugar
1 Pkg. yeast
2 Tsp. salt
1 Tsp.sugar
7 Cups flour
1 Cup mashed potatoes; fresh and hot
1/2 Cup shortening; melted
1 Cup milk; scalded and cooled
3 eggs; well beaten
Cooking Instructions
Dissolve yeast in warm water with 1 Tsp. sugar; set aside. Mix potatoes, eggs, milk, 1/2 cup sugar, shortening, 4 Cups flour, and salt. Add yeast mix and beat until smooth. Mix in enough flour to make dough easy to handle. Knead well 125 times or there about. Let set in refrigerator overnight before shaping into rolls.
Unused dough will keep several days in refrigerator.
