7 Lb. Chicken
1 Lb. Salt pork; sliced thin
2 Qt. Freshly cut corn
5 Qt. Tomatoes peeled and diced
1 Qt. Butter beans
1 Qt. Diced potatoes
2 Medium onions chopped
1/4 Tsp. Red pepper
Salt and pepper to taste
Cooking Instructions
Clean and cut up chicken; cover with water and cook in a heavy kettle until meat falls from bones. Remove bones from chicken and cut up chicken in large pieces. Add salt pork, prepare and add vegetables and seasonings. Simmer slowly until vegetables are tender and mixture is thick and well blended.
